Chicken Noodle Scampi

My dad is a pretty good cook (minus that strange Spam concoction he left on the stove when I visited at Christmas- Euw!  Oh and when he thought meatloaf used Cream of Mushroom soup- it was good, but it was renamed meatslop that night)  We both love pasta and have found that there are a lot of things you can pair with pasta.  My mom isn't the biggest pasta fan, but she makes do when it's Dad's turn to cook.

I've learned my ability to mix together creations from him.  I would say 99% of the ideas I come up with turn out, but every once in a while I wonder what the heck I was thinking.  I don't think either of us use a measuring cup when making things up, so when I blog a recipe, the measurements are probably just a guesstimate.  This is a spin-off of an old recipe my dad invented long ago.

Chicken Noodle Scampi
 For 2 servings:
1/2 stick butter
1/4 yellow onion- chopped
1 clove garlic- chopped
1/4 cup white wine
1 tbsp olive oil
1/4 cup soy sauce
1 boneless skinless chicken thigh (can be substituted for breast) sliced in to small pieces.
Egg Noodles (I used 2 handfuls)

Melt butter in skillet.  Add onion and garlic.  add wine, olive oil, and soy sauce and simmer on medium low.  add chicken and cook on medium low until chicken is nice and brown from sauce.  Scrape bottom of skillet while stirring frequently.

While chicken is browning in skillet, boil egg noodles.  When noodles are done, mix all together in pan.
Tonight I also added some sugar snap peas to the mix.  My sides were a sliced avocado and sweet corn.
