Sweet, Sassy, And a Lil' Bit Classy!

Sweet, Sassy, and A Little Bit Classy Tri-Tip
1 Whole Tri-Tip- grilled over open pit oak flame OR Traeger grill with Oak pellets
1/2-1 C Sassy mix- enough to fully cover as rub on tri-tip
Grill to Medium rare (use the finger trick, it's a great way to test doneness of meat without losing juices by cutting in) The meat should take about 45 minutes to cook, based on the heat of your grill.  I like mine slow cooked over low heat, for maximum flavor.  Should be flipped just a couple times.
After removing meat from grill, immediately wrap in 3 layers of foil and let sit for 5 minutes.  The heat from the meat will continue to cook.
Place meat on cutting board and slice 1 inch slices against the grain and serve immediately with Bush's Sweet Mesquite Grillin' Beans- Served Sassy Style.

Sassy Mix (I use measurements in bulk so I don't have to make it each time)
1 C. Sea Salt
1 C. Black Pepper (Preferably coarse grind)
1 C. Granulated Garlic
1/2 C. Sugar (I prefer Raw Sugar)  **Sweet!
1/2 C. Powdered Lemonade Mix (Something like Country Time Lemonade)
2 tsp. Cayenne Pepper  **Sassy!
I usually mix this all together in a gallon ziploc bag then pour in mason jars to keep for dry storage. If you save your old parmesan cheese lids, they fit perfectly on the top of a mason jar to shake your rub on, then replace again with a mason lid.
Sassy Style Bush's Sweet Mesquite Grillin' Beans
1 Can Grillin Beans
1 Lb. Ground Beef
1 Whole Onion- Chopped
1 Small Can Diced Jalapenos (Or green chile's- depending on your tolerance for heat)
1 Packet Hot Taco Seasoning mix (can be regular taco, again depending on heat tolerance)
Sprinkle Sage
Sprinkle Cayenne Pepper
Brown ground beef in skillet.  Just before done, add the chopped onion and allow to sautee just a little.  Add taco seasoning and follow directions on packet.  Sprinkle in your Sage, and Cayenne Pepper (appx 1 tsp each).  Add can jalapenos. Simmer on low for about 5 minutes and add can of beans.  Simmer on low for just about 5 more minutes before serving with your Tri-Tip.
And of course, while all of this is going on I do like to sip on a little bit of wine, and that's where the classy part comes in.
